I have never tried making an olive oil accord, however by accident, I made a simple accord that smells a lot like olive oil.
There’s a Sumatra Benzoin tincture I made that has no sweetness, not a hint of vanilla and a really fatty food note.
The resin chunks were dark orange and grey and came from Laos.
My wife says it smells like butter popcorn…but I think it smells like a good quality olive oil.
Out of my large selection of benzoins, this one stands out and I always use it for gourmand or food accoryds.
The other important player in the accord is Copaiba oil. To me, it also has a fatty note.

30% Copaiba
30% Amyris
I also made another version, that was olive oil like, but a little sweeter. By lowering the peru balsam, I think it would be close.
